Yellowtail
Yellowtail, often served at celebratory occasions, is characterized by its rich fatty flavor and sweetness. We offer yellowtail with consistent flavor and meat quality.

Red sea bream
Farmed red sea bream is characterized by its beautiful appearance, rich fat content, and strong flavor. Amakusa is one of Japan’s leading producers of both farmed and wild red sea bream.

Amberjack
It is a delicious fish with a crunchy texture, sweetness, umami, and just the right amount of fat. It is called one of the “buri big three” along with yellowtail and amberjack, but it has the least amount of fat and a lighter taste.

Kingfish
Like yellowtail and amberjack, it is a fish of the genus Seriola and family Carangidae in the order Perciformes, and is characterized by a yellow line running down the center of its body. It is the fish that grows the largest among the Carangidae family, has a fast swimming speed, and has firm flesh.

Fillet
It is a processed form of round fish (unprocessed whole fish) with the organs, head, tail, fins, and backbone removed.
Loin
The fillet is cut into belly and back sections, making it easier to prepare afterwards.
